Vamos a Ver — 'let's wait and see' — captures the unhurried spirit of a Spanish evening transplanted into one of Amsterdam's most beloved and diverse neighbourhoods. We opened our doors on Govert Flinckstraat because De Pijp's energy, its market stalls, its mix of cultures and its appetite for life, felt closest to the Iberian soul we wanted to share. Every dish we serve is a conversation between Amsterdam's cosmopolitan table and the bold, honest cooking of Spain.
